Aubergine Roll Ups
Serves 5-6 as a side dish
Ingredients
3 small to medium aubergine
6 sprigs fresh thyme
Handful fresh basil
Ricotta
4 tbsp grated Parmesan
1 lemon
5 tbsp olive oil
1/4 cup Tomato passata
Salt & Pepper
Method
Pre heat oven to 180 degrees C. If using a BBQ then pre heat this as well. Slice off the head of the aubergine then thinly slice length ways into large strips. Drizzle in olive oil and season well. Place either on BBQ or in a pan and grill for about 5 mins on each side. Do this in batches. While cooking, mix ricotta & Parmesan in a bowl. Roughly chop basil and grate the zest of the lemon and add to the bowl. Take 2 sprigs of thyme. Using one hand to hold the sprig of thyme, use the other to remove the little leaves by sliding it back against the way they grow. Add to the bowl too. Mix all together and season well. Remove the aubergine from the BBQ or pan and lay out on a chopping board. Place a spoonful of the mixture into each aubergine strip and roll up. Continue doing this until all the strips and ricotta mix has been used up. Pour tomato passata onto base of the oven tray then place the aubergine rolls on top. Drizzle with remaining olive oil and season again. Place remaining sprigs of thyme on top and put into the oven. Bake for 20 mins.
