Baked Aubergines with Salsa Verde

Ingredients
2 Aubergines
Handful basil
Handful coriander
2 garlic cloves
1/2 cup olive oil
1 tbsp Apple cider vinegar
Salt & Pepper
Method
Serves 2-4 depending on whether they are the main component of the dish or a side.
Pre heat oven to 200 degrees C. Chop aubergines in half keeping the head on. Using a sharp knife slice the middle, being sure not to cut through to the skin, into a grid. Drizzle in olive oil and season. Put in oven for 20-30 mins. While baking put all remaining ingredients into a blender and pulse for a couple of seconds to combine. Set aside. Remove Aubergines from the oven and spoon salsa on top.
