Ingredients
1 small courgette (or half a large one)
4 eggs
1/4 tsp cayenne pepper (optional)
1/4 tsp paprika (optional)
Salt & Pepper
Method
Grate courgette into a bowl and crack in eggs. Add spices and whisk together until well combined. In a medium heat pan drizzled in olive oil or butter, spoon mixture in like you would fritter batter. Cook for about 30 seconds each side or until brown then remove from the pan. Add more oil or butter between batches. Continue until all mixture is used. Should make around 6 pancakes. Serve with spinach or rocket, some guac or Avo slices, herbs (I used coriander) or any other veg you would like!
