200g self raising flour
200g Greek yoghurt
5 figs
Honey
Fresh Thyme
Olive oil
Method
In a bowl combine yoghurt and flour together with your hands. Knead for a while until the dough is well combined. Sprinkle some flour on a clean bench or chopping board and pull pieces of the dough off and roll them out to the size you require. Put a pan on hot and drizzle olive oil, place a flat bread on for about 30 seconds then once it starts to bubble flip it over. Continue this process until you’ve used up all the dough, making sure to drizzle olive oil in-between flat bread frying. Slice goats cheese and figs, once flat breads are cool arrange on top. Push the goats cheese down slightly. Lay some sprigs of fresh thyme then drizzle honey on top. Should make between 5 and 10 flat breads depending on how big you roll them.
