Ingredients
12 eggs
2 sweet potatoes
1 cup cherry tomatoes
12 asparagus spears
1 tsp butter
75g goats cheese
Method
Pre heat oven to 180 degrees C. Dice sweet potato into small cubes and place on an oven tray and into the oven for 15-20 mins. Chop asparagus spears into thirds, first breaking off the end by snapping where it naturally breaks. Slice cherry tomatoes into quarters and add to a low heat pan with the asparagus and butter. Season and cook for a few mins or until asparagus has started to soften. Crack eggs into a large bowl, whisk until smooth then pour veggies in, season and fold veggies into the egg. Once the sweet potato is cooked then remove this from the oven and add to the egg mix also. Stir well then pour the whole mixture into a baking tray or cake tin. Spoon goats cheese on top into scattered clumps. Place in the oven for 30 minutes. Remove from the oven and slice up. Recommend serving with a green salad.
