Green Mac & Cheese

Serves 6

Ingredients

500g macaroni
200g spinach
2 cups full fat milk
50g butter
1/2 cup flour
500g grated cheddar
2 tbsp panko crumbs
Salt & Pepper

Method
Pre heat oven to 200 degrees C and boil a large pot of water. Place all the spinach and half the milk into a blender and blitz until smooth. In a pan melt butter on a medium heat, reduce heat and add the flour, whisk until it looks like wet sand. Add first cup of milk in and continue whisking. Once the butter and flour has thinned into the milk, add green milk through a sieve and continue whisking. Turn the heat back up to medium and season well. As the sauce starts to thicken continue whisking it, then add majority of the cheese leaving a bit for the top. Continue whisking constantly as the cheese melts. By this time your water should be boiling so add the macaroni and reduce the white sauce mix down to the lowest possible heat. Continue to whisk every now and then. Drain the macaroni and pour into a baking dish. Pour the sauce on top then mix in well. Pat down and sprinkle remaining cheese and panko crumbs on top. Grind some pepper on top then place in the oven for 15 mins.
