Halloumi & Roast Vegetables Gyros from scratch

Serves 4

Ingredients

Flat Breads
300g self raising flour
300g Greek yoghurt
Fill
2 blocks halloumi
2 red peppers
1 courgette
1/2 cucumber
5 tbsp Greek yoghurt
1/2 lemon
4 potatoes
1/2 red onion
2 tomatoes
1 cup coriander
2 tbsp oil
Salt & Pepper

Method
Pre heat oven to 200 degrees C. Slice potatoes into chips and place on an oven tray, drizzle in oil and sprinkle on plenty of salt then place in the oven for 30 mins. While they’re cooking slice up the capsicums and courgette and place on a separate oven tray, season well and place in the oven. The courgettes have a lot of moisture so don’t oil them or they will go really soggy. Bake for 20 mins. While everything is in the oven prepare the flat breads. Mix yoghurt and flour in a bowl with a spoon and then your hands until it forms a dough and is one large piece with nothing else remaining in the bowl. Dust some clean bench space with flour then pull pieces off about the size of a golf ball and roll out until it creates a thin flat bread. Continue this process until there is no dough remaining. You can stack the flat breads on a plate but make sure they are floured in between so they don’t stick. Slice up the tomato and onion and place on a platter, roughly chop the coriander and add this to the platter also. Grate cucumber and place in a bowl with the yoghurt, squeeze in the lemon then mix well. Garnish with black pepper. If the veggies are now finished you can turn the oven off and leave them in there to keep warm while you make the flat breads. Fry the flat breads one at a time with a drizzle of oil in the pan between each one. Fry on a medium to high heat so they cook quickly but don’t burn. Keep an eye on them then flip once browned on the bottom side. Repeat until all are fried. Place these in the oven to keep warm, then slice the halloumi into pieces and fry in the pan until browned on both sides. Add the halloumi, veggies and flat breads to the platter and pour the chips into a bowl or platter to serve. Place everything on the table for people to create their own. Build the flat breads with yoghurt first, followed by coriander, halloumi, tomato and onion, veggies and finally the hot chips.
