Whole Baked Indian Spiced Cauliflower

Serves 4-6

Ingredients

1 cauliflower
1 tsp curry powder
1 tsp cumin seeds
1 tsp turmeric
2 tbsp yoghurt
1 lemon
Coriander
Salt & Pepper
Boil a large pot of water and pre heat the oven to 200 degrees C. Once the water has boiled place in the pot for 15 minutes. Remove from the pot and place in a lined oven dish. Mix spices together in a small bowl then sprinkle all over the cauliflower. Use your hands to rub it in, make sure you go down the sides, not just the top. Wash off your hands ASAP so the turmeric doesn’t stain, season the cauliflower well, and place dish in the oven for another 15 minutes. While it’s baking, mix yoghurt and lemon juice juice together and set aside. Finely dice up the coriander for garnish. Remove Fromm the oven and drizzle yoghurt on top, then sprinkle the coriander and serve.
