King Prawn Spaghetti

Serves 6

Ingredients

1kg king prawns
400g spaghetti
2 handfuls basil
1 red chilli
4 garlic cloves
25g butter
4 lemons
2 tbsp mascarpone
1/2 cup cherry tomatoes
1/2 cup olive oil
1/2 chorizo sausage stick

Method
Boil a large pot of water for the spaghetti. While this is boiling prep all the ingredients by removing any long prawn tentacles. Finely dice the garlic, chilli and basil and grate all lemons with a fine grater to remove the zest. Slice the chorizo and cut cherry tomatoes in half. In a low heat pan, place the garlic, zest, chilli and olive oil. Cook until the garlic starts to soften, then add half the basil and all of the chorizo. Add the prawns to the pan and at the same time add the pasta to the boiling water. Flip the prawns after a few minutes to cook the other side. Add the cherry tomatoes. When the prawns are cooked through, remove from the heat and squeeze the lemons you grated earlier. Add the mascarpone and butter and stir to combine so all ingredients are melted in. Drain spaghetti and put in a large bowl. Pour prawn sauce over the top and sprinkle on the remaining basil.
