Marinated Peach & Burrata Salad

Serves 6

Ingredients

5 yellow flesh peaches
1 red chilli
3 tbsp red or white wine vinegar
2 tbsp olive oil
1 lemon
1 cup basil leaves
1 cup rocket
2 garlic cloves
1 tbsp honey
2 burrata balls

Method
Slice peaches and place in a bowl with vinegar, olive oil and lemon juice. Finely dice the chilli and place half in with the peaches and set half aside. Dice garlic and roughly chop half the basil and add to the bowl too. Drizzle the honey over and stir so peaches are well coated with all ingredients. Place in the fridge for 1-3 hours to marinate. Continue stirring every half hour or so to ensure all pieces are sitting in the mixture. Sprinkle rocket on a player evenly, place two burrata balls on top. Remove peaches from the fridge and spoon on top of the rocket and around the burrata. Sprinkle the remaining chilli and roughly chopped basil on top and another drizzle of good quality olive oil if you wish for garnish.
