Ingredients
1 cup peas
3 tbsp coconut yoghurt
Handful coriander
Tbsp apple cider vinegar
1 cup edamame
1 block tofu
2 tbsp soy sauce
1 green chilli
1 tbsp sesame oil
Method
Defrost peas and edamame. Place peas, yoghurt, coriander and vinegar into a blender or food processor. Pulse until all combined but is still chunky, you don’t want it to be totally smooth. Pour into a bowl/ serving dish, sprinkle edamame on top then pat down and set aside. Dice tofu into cubes and place in a pan with the sesame oil and soy sauce. Fry for a few minutes until outside has started to crisp up. Sprinkle on top of the pea crush. Finely dice chilli and sprinkle on top. Can use more oil on top for garnish if required.
