Saag Paneer Curry

Serves 2

Ingredients

250g Paneer
4 frozen spinach cubes
1 cup milk of your choice
1 red onion
4 garlic cloves
3 tsp medium curry powder
1/4 tsp chilli flakes (optional for spice)
4cm ginger
1 tsp turmeric
1 tbsp olive oil
1 lemon
Handful coriander

Method
Finely dice onion, garlic and ginger and place in a medium heat pan or pot with olive oil, curry powder and turmeric. Fry for a few minutes until onion starts to soften. Chop Paneer into cubes and add to pan, fry for another few minutes then add the frozen spinach cubes. Continue frying until the spinach cubes start to defrost and come apart. Add the milk and lemon juice and leave to simmer on low for about 5 minutes. Roughly chop the coriander and add to the pot, stir through then serve into bowls.
