Salmon & Bulgur Wheat Salad

Serves 2

Ingredients

2 salmon fillets around 250g
1 cup bulgur wheat
1 cup edamame
1 cup baby spinach
1 tbsp Apple cider vinegar
Juice of 1 lemon
2 tbsp olive oil

Method
Pre heat oven to 180 degrees C. Cook bulgur wheat according to pack instructions. Bake both salmon fillets on a lined oven tray for 10 minutes. They should both take about the same time. Defrost edamame using a microwave or pan with a little bit of water, should only take a few minutes. Pour bulgur wheat into a mixing bowl along with the salmon. Using a fork start to flake up the salmon and mix in with the bulgur wheat. Add the edamame & baby spinach, mix through. Pour in the olive oil, apple cider vinegar and squeeze in the lemon. Mix through and serve into bowls.
