Seed Loaf

Serves 6

You will need a silicon loaf pan for this recipe

Ingredients

1 Cup Sunflower Seeds
1/2 Cup Flax Seeds
1/2 Almonds
1.5 Cups Rolled Oats
2 tbsp Chia Seeds
4tbsp Psyllium Powder
1tsp Sea Salt
3tbsp Coconut Oil
1.5 Cups Water

Method
In the silicon loaf pan combine all dry ingredients, mix through well. Melt coconut oil in the water and then slowly start adding to the pan, mixing through as you go. Combine until everything is well mixed, the dough will become very thick quite quickly, like a glue texture. Smooth out the top of the loaf using additional water if required. Leave for a day or overnight in a cold oven. Pre-heat oven to 175 degrees C, place in middle rack and bake for 20 minutes. Remove from the oven and slide out of loaf pan, placing on the oven rack upside down to cook for another 40 minutes. Do not do this step if the loaf appears to be falling apart, put back in the oven in the pan and continue to bake for a while longer. Remove bread from oven rack and place on a cooling rack for at least an hour until completely cooled. Slice and serve with any of your favourite toppings like nut butters, eggs, tomatoes or hummus. This bread freezes well, but make sure you slice before freezing!
