Shakshuka

Serves 3

Ingredients

6 eggs
1 tin tomatoes
250g cherry tomatoes
1 brown onion
5 cloves garlic
1 red chilli
1 tsp paprika
1 tsp cumin seeds
1 red capsicum
Salt & Pepper
Handful coriander (optional)
Chilli oil (optional)

Method
Pre heat oven to 180 degrees C. Dice onion, garlic and chilli and put in a pan with a drizzle of olive oil. Cook on medium heat until onions have softened. Slice capsicum into strips and cut cherry tomatoes in half and add to the pan. Cook until capsicums have softened then add the tinned tomatoes. Season well. Using a spoon create holes around the edge of the pan in the mixture and crack the eggs in. Place pan in the oven for 15 mins. Dice coriander and set aside. Remove dish from the oven, make sure you use a tea towel or oven mitts as the handle will be really hot! Place on a board on the table and sprinkle coriander on top, and a drizzle of chilli oil if using.
