Sweet Potato Cheesey Bake

Serves 6

Ingredients

5 Sweet Potatoes
25g butter
300ml cream
4 garlic cloves
1 tbsp flour
150g grated mature cheddar cheese

Method
Pre heat oven to 200 degrees C. Slice the sweet potatoes into circles, leaving the skins on, and place in a lined baking dish with the skin facing upwards, circles standing up right on their sides. Dice the garlic and add to a pot with the butter, cook on a low to medium heat until butter has melted. Sprinkle on the flour and stir until all lumps are gone. Pour in the cream and keep stirring, once it’s smooth again then add majority of the cheese, leaving some to go on top. Keep stirring and when the sauce has started to thicken and the cheese melted take off the heat and pour on top of the potatoes. Smooth out with a rubber spatula or back or a spoon. Sprinkle the rest of the cheese on top, then place in the oven for 45-60 mins.
