Ingredients
3 sweet potatoes
150g cherry tomatoes
50g walnuts
1 block feta
60g rocket
Handful coriander
2 tbsp olive oil
2 tbsp pumpkin seeds
2 tbsp balsamic vinegar
Method
Pre heat oven to 200 degrees C. Chop sweet potato into cubes and add to an oven tray. Drizzle on the oil, season well and toss. Place in the oven for 15-20 mins or until soft. While it’s baking pour rocket into a salad bowl or platter, roughly chop coriander and sprinkle on top. Slice cherry tomatoes in half, dice feta into cubes and set both aside. Sprinkle nuts and seeds into a pan with another drizzle of olive oil and cook on a low to medium heat until the walnuts start to brown. Remove from the heat and set aside. Once sweet potato is cooked remove from the oven and sprinkle onto the greens. Toss slightly and drizzle in balsamic. Next sprinkle cherry tomatoes, feta then finally the nuts and seeds.
