Tofu Saag Curry
Serves 4
Ingredients
2 blocks tofu
5 frozen spinach cubes
1 brown onion
4 garlic cloves
Handful coriander
2 green chillis
1 tbsp medium curry powder
1 tsp garam masala
1/2 tsp turmeric
2cm ginger
1 tbsp olive oil
2 tins coconut milk
2 tbsp coconut yoghurt
1 tsp maple syrup or date syrup
Method
Finely dice the onion, garlic, ginger, chilli and coriander. Add to a large pot with the olive oil and spices, cook on a high heat until the onions soften. Add the tofu and stir so all pieces are well coated in the spices. Add the spinach cubes and stir until they start to defrost. Pour in the coconut milk and continue stirring. Once all the spinach is defrosted, add the syrup then leave to simmer for a few minutes. Spoon into bowls.
