Tomato & Ricotta Tart

Serves 6

Ingredients

4-5 large Tomatoes 

3 Basil leaves 

1 sheet puff pasty 

5 tbsp ricotta 

1 egg 

1/2 tsp white sesame seeds (optional)

1/2 tsp black sesame seeds (optional)

Method

Roll out pastry onto a small oven tray. Spoon on ricotta and smooth out. Slice tomatoes and layer on top. Crack into a bowl and whisk, then brush on the edges of the pastry where the ricotta isn’t. Place in the oven for 30 minutes. Remove from oven and leave to cool. Finely slice basil and sprinkle on top, followed by the sesame seeds.
